Mattar paneer is a vegetarian North Indian dish consisting of peas and paneer in a tomato-based sauce, spiced with garam masala. It is often served with rice.
Ingredients
1 tsp Turmeric Powder
2 tsp Red chilli Powder
2 tsp Coriander Powder
8 Green Chilies
2 Medium Size Tomatoes
6 tsp oil
2 tsp Cumin Seeds
1 Glass of Water
2 tsp Salt
1 tsp Garam masala Powder
1 Cup Fresh Coriander
1 Garlic and 1 Medium Ginger Smashed
2 Medium Onion Chopped
Half kg Paneer
Half kg Matar
Place a cooking pot on your cooker and add the oil into it. Next, add the onion as well as the smashed garlic and smashed ginger. Let's add your tomatoes and give it a good mix. Now, let's add the salt and ensure to give it a good mix.
Now let's add the green chillies and give it a good mix. Close the lid and keep it closed for 3 minutes on a low flame.
Preparing the Puree Paste
Take the content of the cooking pot and place it in a bowl. Using a hand blender, mix the content so that it slowly becomes a puree paste. Keep blending it until it is a rich light brown texture.
Continuing to cook
In an empty cooking pot, place the cooking pot on your cooker, and add in the oil. Next, add the cumin seeds and give it a mix. Add the red chilli powder and again give it a good mix.
We can now add in our puree paste and keeping mixing the cooking pot on a low flame to stop the paste from burning. We will also now add the coriander powder. Next, let's add the turmeric powder and again ensure that you give it a very good mix.
Close the lid and allow the cooking pot to cook for about 3-4 minutes. Ensure that you keep mixing during this time also util the paste becomes really nice and smooth.
Let's add in the salt and give it another quick mix.
Adding the Paneer and Matar
Next, let's add the Paneer into the cooking pot and as before ensure that you give it a good mix. Let's add our second key ingredient which is the Matar. Let's top up the cooking pot by adding in a glass of water. This will also help to stop the cooking pot from burning.
Close the lid for about 5 minutes on a high flame. After 5 minutes, remove the lid and add garam masala powder and ensure to give it yet again another good mix.
Finally, let's add our fresh coriander. This will help to preserve a rich and fresh flavour. Again, give the dish a really good mix and it will soon be ready to serve.
